Green Bean and Red Potato Recipe.
Green beans, also known as string beans, are a
nutrient-loaded vegetable. Green beans are an excellent source of vitamin C,
vitamin K and manganese. They are also a good source of vitamin A, potassium,
folate, iron and dietary fiber. Red potatoes are higher in nutritional value
than regular potatoes, especially with the potato sins left on, as is called for
in this recipe. The red potatoes add Vitamin B6, potassium, beta carotene,
dietary fiber and Vitamin C to the already nutritious green beans. One final
benefit -- this recipe tastes great!
Green Bean and Red Potato Recipe
2 lbs. fresh green beans
8 medium red potatoes
8 slices bacon
chicken stock
salt and pepper, to taste
Snap ends off beans and cut into 2-inch pieces. Cut potatoes in half. Fry bacon
n a large pot until brown. Add the beans and potatoes and cover with chicken
stock. Bring to a boil. Reduce heat and simmer for about one hour.
